Lentil & Quinoa Salad


Lentils and quinoa are two great sources of vegetarian protein, and they go great together in this light and tangy salad dish.

Serves 4

  • 2 cups cooked black lentils
  • 2 cups cooked quinoa
  • 1/2 cup olive oil
  • 1/2 cup chopped good quality pitted olives
  • 1/2 cup roughly chopped red onion
  • 3/4 cup pomegranate kernels
  • 1/2 cup finely chopped fresh mint
  • 1/2 cup finely chopped parsley
  • 1/2 cup diced cucumber
  • 2 cloves finely chopped fresh garlic
  • Juice of one lemon
  • 1 tablespoon pomegranate molasses
  • Sea salt and freshly ground black pepper to taste
